Garlic Pasta for a Crowd

I love this dish! It can be vegetarian or add meat. My kids actually like it better without the meat. Its a hearty dish that sticks to your ribs. It gets better on day two or three for sure. I got this recipe from a hole in the wall diner. It's an all time favorite dish they serve up on their menu. I hope you like it!

Hidden Mint Cupcake




Again with the Girl Scout Cookies coming out I had to use them in a cupcake. Inside this chocolate cupcake is a Thin Mint Girl Scout Cookie. Yes BAKED inside the cupcake. Add Chocolate Icing and I embellished with another mint cookie for looks! YUM!

Molasses meets OATMEAL...say WHAT?

Oh yes! They have met and are so good I can't stop eating them. WITH Coffee!!!
So Seriously good......Why have I never seen this combo before? I may be on to something!!!Shhhhh!
THIS is the kind of stuff I think up when I am awake at night!! I get my best ideas in my lite sleep mode that I hate by the way! I want to sleep......

~Recipe~

1 1/2 cups flour
1 tsp ground cinnamon
1 tsp baking soda
1 tsp salt
1/2 cup sweetened coconut
1/2 cup unsweetened coconut
1 cup butter
1 cup packed brown sugar
1/3 cup black strap molasses
1 egg
2 tsp vanilla
3 cups old fashioned oats


preheat oven to 350 degrees
In medium bowl blend all dry ingredients except oats, but include coconut.
In another bowl beat butter and sugar until fluffy, about 5 minutes. Add egg and vanilla. Beat until combined. 
With mixer on low, add flour and blend until combined.
Add oats, mix until combined. Scoop to cookie sheet.
Bake at 350 degrees for 14 minutes.

I know I posted twisted lemon last time. But with the Girl Scout Cookies coming out I couldn't resist using them on my lemon cupcakes. Because I LOVE to embelish a cupcake with other yummies! Enjoy!
