Oatmeal Chocolate Chip Cookies




Crunchy. Chewy. Buttery. Chocolatey. 

These Oatmeal Cookies are so good. And easy to make. 


~Recipe~

2 sticks or 1 cup of butter
1 egg
1 cup dark brown sugar
2 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 cups real oats
1 1/2 cups flour
1 cup coconut
1 1/2 cups chocolate chips

Preheat oven to 350 degrees
In mixing bowl blend butter and sugar. 
Add eggs. Vanilla. Salt. Soda. Cinnamon. Mix together.  
Beat in flour. 
Fold in with wooden spoon oats, coconut and chocolate chips. 
Scoop with large cookie scoop onto parchment paper. 
Press each cookie down with spatula. 
This helps them bake evenly. 
Put in oven for 15 minutes. 


Lou's Crockpot Cowboy Beans



My brothers mother in law Lou,  is a great southern cook. I've made several of her recipes throughout the years. 
The latest is her Cowboy Beans. 
We all love them. 
Easy meal. 
Easy potluck and a crowd pleaser. 

Ingredients 
One pound ground round. 
One onion
One green pepper
2 large cans Bushes Beans
1/2 cup brown sugar
1 tbsp yellow mustard 
1 tbsp minced garlic
Salt and pepper to taste


Add beans to your LINED crockpot. 


Hello!! Life changer here. 


Add brown sugar. 


Add mustard. 


Sauté veggies 


Add to beans. 


Sauté meat until brown. 



Add to beans and gently stir. 


Salt and pepper. Place lid on top. Set on low. 
Cook for at least a few hours. These get better everyday. 
Make some cornbread. Mmmm mmmmm!!










Middle School here we come.....again.

He's nervous. Excited. Crabby. And asking one million questions. 
All I know to do is focus on his questions.  Be patient. And helpful. I remember feeling like this. 
He left with a smile. 
Two big thumbs up. 

He even let me take pics. Yay!! 


So darn cute!! 


Repurposed Candy {homemade suckers}

Kids in the kitchen are projects I like to do. And this one was easy. 
Choose any type of hard candy you like. 
Lanny picked sour jolly ranchers. 
And you need Popsicle sticks.
Plus a LINED cookie sheet. We used parchment. But I'm sure you could use foil. 

Next 



Place candy on Popsicle stick. With one at the very top. Kind of hanging over. 


Like this. 


Use five candies. Mix it up or not. It's your creation. 

 Ready for the oven. 350 degrees for 3-5 minutes. 
But you have to keep an eye on them. 
When you see them begin to melt. Remove from oven. 


Leave then on the cookie sheet until they cool. They will continue to melt. 


Peel them off and enjoy.

Blueberry Oatmeal Bread {Pinterest}



Pinterest Success. I must share. 

Blueberry Oatmeal Bread



It came out perfect and delicious. 

RECIPE

1 stick of butter melted and cooled slightly 
2 eggs
1 tsp vanilla
1 cup fresh blueberries. { frozen will work}
I cup Greek yogurt 
I cup sugar 
1 tsp salt
2 tsp baking powder
1/2 cup oatmeal
2 cups plus 1 tbsp flour

Prepare 9/5 loaf pan by lining with parchment paper. 
Preheat the oven to 350 degrees. 

In small mixing bowl.  Toss berries with 1 tbsp. flour. To keep them from sinking to bottom of bread. 

In large mixing bowl. Hand mix. Eggs, yogurt, sugar and vanilla. Stir in butter. 
Next combine flour, baking powder, salt, and oatmeal. Pour into egg mixture. Stir until combined. 
Fold in berries. Gently. 
Pour into prepared dish. 
Bake at 350 degrees for 1 hour. Or until toothpick comes out clean.

Bedroom Reno: Headboard



What to do? We couldn't decide. Old door? Barn wood wall? Build headboard with cubbies and put candles in them? 
All I knew was I wanted: light and airy. 

So after much thinking. Drawing. Looking in Pinterest. I came up with this.....


We weren't sure what it would really look like. We just started going through our old wood we had been collecting for YEARS. 
All I knew is that I wanted airy sheets to hang from the top. And maybe eventually twinkle lights. ❤️ twinkle lights. 

So. Today we got started. 


We did have to go get two pieces of cedar wood. 8 feet long. Cut them to 7 feet. 
The three pieces we are attaching to the cedar is 100+ year barn wood beams my brother gave us 6 years ago. 



Next we took the old wood from a park bench my neighbor redid. He gladly gave me the scrap. 👍🏻



We used the bench scrap to add a shelf. And cover over the cedar. The cedar is more like a foundation to the entire project. To hold it together if you will.

We covered the cedar foundation with the old wood. 

I say we. It was my best guy. My husband. 😘😘

I wanted the curtain rod to be hidden.

Finished Product:




Love love love!! 
Now I need hardware to pull curtains back. Maybe old door knob? 
I will be back to show the finished product.

Homemade Potato Chips. So easy.

Lanny saw a you tube video on chips and kept bugging me to make them. 
So we bought the potatoes. And early Saturday morning got started. 
We cut the potatoes thin on the mandolin. 
He put them on a sheet pan. Single layer. 
He then cut small chunks of butter and placed one chunk on each potato. 
He sprinkled then with kosher salt. 
Preheated the oven to 350 degrees. 
Baked chips for approx. 30 minutes until brown and crispy. 
They were sooo good!!
Way to go Lanny!!
