Directions for a double recipe!
1. Cream Butter or Crisco Sticks

2 minutes. I usually use crisco sticks

2. Add brown sugar and continue mixing for 3 to 4 minutes until light and fluffy.
3. Add eggs and blend.
4. Add maple syrup and blend.
5. Add Vanilla and blend.
6. Add cinnamon, salt and baking soda and blend.
7. Add coconut and blend.
8. Add flour
9. Blend until just incorporated. Do not over beat.
10. Add oatmeal and beat until combined.
11. Scoop onto parchment lined cookie sheet.
12. Bake in a preheated oven at 350 degrees for about 15 minutes. I take them out when they are just slightly brown on edges. This keeps the cookies chewy.
Don't let the coconut turn you off. I have served these to many a non-coconut lover and they didn't even know coconut was there. Really, my son Austin loves them and really dislikes coconut.
Now a coconut allergy is another story.
