I ♥ all food!
I ♥ all food! The key is I like making it. I don't like anything processed. So I spend a lot of time in the kitchen cooking and baking. I also like easy quick stuff. This is one of my favorites. I can it it as a meal or a snack anytime of the day. It is the best!!

The search continues for the Lynch's Bakery of South Bend, Indiana favorite childhood cookie! I made this recipe up myself. Hoping it would be the ONE!! It's not. So I will continue on in my search. Oh, but these are good and will go into my cookbook I am writing!! ♥ Joy!

Easy No Bake Brownie Bites
Really Easy and Super Good!
2 cups Walnuts
2 1/2 cups dates
1 cup Dutch Processed Cocoa
1 cup Almonds
1/4 tsp. sea salt
In food processor add walnuts and dates. Process until blended well. Add salt and cocoa. Blend until crumbly.
Rough chop the almonds and mix in a bowl with other ingredients.
scoop by tablespoon full and form a ball.
Place in airtight container.

Chimichurri Sauce......Spice up that meal!
A wonderful addition to fish, chicken, pork or beef.
Chimichurri Sauce
1/2 purple onion
4 garlic cloves
1 1/2 cups cilantro, chopped
1 cup parsley, chopped
juice from one lime
3/4 cups extra-virgin olive oil
1 tsp. sea salt
black pepper to taste
Place all ingredients in food processor and process on low until mixture is almost smooth. Excellent served over grilled steak, grilled chicken, pork and fish.
I put it over baked tilapia...Wonderful!
Store in refrigerator.

Scrambled Eggs with greens! Yummy!
Mixed my greens with scrambled eggs! This is a wonderful dish! ♥it!!
Just Saute your greens in coconut oil and onion. This takes seconds. You still want some crunch to them so don't cook for too long. Scramble some organic eggs with salt and pepper. Toss with the greens! Yum!!

Powered up the Juicer last week! Oh, so good!!
I love using my juicer. The juice is so fresh tasting. To be honest I have never used a recipe. I just use what I have in the refrigerator. Tasting it along the way to see if I need more lemon or not. Fabulous!

Greens, Eggs and Bacon
Collard Greens that is! This is a wonderful dish I put together this morning just using fresh ingredients I had in the house. It was Delicious!! I felt like it was easy too. Filled my belly up for a good long time. Made it through Zumba class!
Recipe
for
Greens, Eggs and Bacon
A bunch of fresh Collard Greens or greens of choice cleaned and chopped roughly. You can buy these in a large bag already cleaned.
One large onion chopped.
1/2 pound of bacon cooked.
coconut oil
salt and pepper to taste
Poached eggs....your desired amount
Instructions
Melt coconut oil in large pot.
Add Bacon that you have crunched up into bite size pieces.
Add onion and saute.
Add greens, salt and pepper.
Saute until still slightly crunchy.
Salt and pepper to taste.
Poach eggs to your favorite consistency.
I like them a little runny.
Add a garnish of fresh tomatoes!
Delish!
I made breakfast bowls with this for the week ahead. Yum!!

Garden Meatballs Paleo Style...My Recipe♥
Ingredients
1 pound lean ground pork
2 pounds lean ground beef
2 cloves garlic freshly minced
handful of fresh spinach chopped
handful fresh arugula chopped
1 medium onion minced
8 mini red, yellow and orange sweet peppers chopped
1 can tomato paste
2 organic eggs
2 tablespoons italian seasoning
1 tsp salt or to taste
1 tsp pepper or to taste
1. put meat in a large mixing bowl.
2. prepare all chopped veggies, paste and eggs.
3. add seasonings
4. add garlic and blend well.
5. Blend all together.
6. until well combined.
7. Form into meatball shapes. I do mine large so that two are a serving. Approx. 1/2 cup per meatball.
8. Place on rack and put in oven 350 degrees for 40 minutes.
9. Serve warm with your choice of side dish or sauce.
De-Lish!!
This recipe freezes well!!
Easy Paleo Breakfast Option
These can be made ahead of time and microwaved just prior to eating. An easy "to-go" breakfast for the busy morning rush.
Add an avocado and tomato...YUM!

Santa is Coming to Our House!
After the LONG journey to the nice list, the time has finally come. Santa will be here tonight. George will be leaving and going back home. We will really miss the little guy. Santa has been busy and will be at our house in the wee hours of the morning. It is very important not to peek too soon. Whew, glad he warned us. I'm sure it would have been an early morning at the Wade house!

Easy Scarf from Old T-Shirt in 15 minutes? ♥
Super Cute and Really Easy!
Follow these simple directions to Fabulous!
1. Find an old t-shirt.
2. Lay it on the table.
3 .Cut the Hem off the bottom.
4. Start cutting strips about 1 inch thick.
5. Stretch each strip so that the sides curl and set aside to cut more strips. Cut all the way up t-shirt to the arms.
6. Done!
7. We added the braided strips to this scarf.
8. Add flowers, mix colors and more. The options are endless! fabulous♥
