Stuffed Acorn Squash


I saw this recipe on FB as we were driving to the farmers market. 
So I quickly  jotted  the ingredients down on my grocery list. 
There were so many different types of squash to pick from. But I chose the classic acorn squash. 

Recipe 

Cut ends of squash off. 

Cut squash in half and hollow out. 
Drizzle with olive oil. 
Sprinkle with salt and pepper. 

So pretty. Place in 400 degree oven for 20 minutes. 
Meanwhile. 
Next. 
Dice two stalks of celery. 
One small yellow onion. 
Three cloves garlic. 



Sauté in oiled pan. With one pound Italian sausage. 
Salt
Pepper 
Italian seasoning 
All to taste. 


When done. Add 
One cup Panko bread crumbs. 


And 1/2 cup Parmesan cheese. Grated. 


Squash should be done. 


Start filling squash with filling. 






Sprinkle with shredded Parmesan cheese. And bake for about 20 more minutes. 



Smells so great! 

So delicious! Really. Yumm.
