Oatmeal Chocolate Chip Cookies

Crunchy. Chewy. Buttery. Chocolatey. 

These Oatmeal Cookies are so good. And easy to make. 


2 sticks or 1 cup of butter
1 egg
1 cup dark brown sugar
2 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 cups real oats
1 1/2 cups flour
1 cup coconut
1 1/2 cups chocolate chips

Preheat oven to 350 degrees
In mixing bowl blend butter and sugar. 
Add eggs. Vanilla. Salt. Soda. Cinnamon. Mix together.  
Beat in flour. 
Fold in with wooden spoon oats, coconut and chocolate chips. 
Scoop with large cookie scoop onto parchment paper. 
Press each cookie down with spatula. 
This helps them bake evenly. 
Put in oven for 15 minutes.
